4.

Add in a 1/4 cup of cheese of your choice (I went with a mix of Parmesan and cheddar), 1tb of balsamic vinegar and stir well.

5.

Add salt to taste and let it simmer for 5-10 minutes till the flavors get to know each other.

6.

Boil 500g of Penne according to packaged instructions till just a bit under cooked, drain but leave a bit of pasta water in the pot.

7.

Add Penne and a bit of pasta water to the sauce and mix well.

8.

Increase to high heat and let the sauce coat the pasta, mixing well to ensure all the little Penne's get a bit of the lovely sauce.

9.

Plate and top with more fresh basil and cheese, or if you want add a choice of protein for that extra fill.

Extra

Fry the onions, garlic and mushrooms with a tablespoon of tomato paste if you would like a richer deeper tomato flavour to the sauce.
