What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
TOMATO & BASIL PASTA
In a tough, busy, rushing world we need some quick and easy meals. Something that you can make in under 10 minutes, and into your body to fuel your body for the rest of the day.
After my little trip to Italy I found the beauty of pasta, they are actually really simple dishes that can be made fast and tasty. Using only the finest ingerdients, you can whip up a delicious dish in under 10 minutes and with 10 ingredients or less.
This is one of my favourites during my trip, a classic and simple tomato and basil pasta with a little bit of feta cheese. A thick, rich, sweet and fragrant tomato sauce, enriched with perfumes of basil and little nuggets of cherry tomatoes scatttered around. Perfect for a quick lunch, dinner or a dish to bring to over a party.
Quick & Simple

Set your pasta to boil in some boiling salted water according to package instructions.

Peel and finely mince 1/2 a white onion

Halve a bunch of cherry tomatoes, the amount is all up to you. I usually cut about 6-8 per serving.
Ingredients

Fusilli

250ml Tomato Passata

Cherry Tomatoes

1/2 White Onion

Feta Cheese

Fresh Basil

1tb Unsalted Butter

In a large pan or wok heat up some oil over medium high and gently fry your onions till fragrant.

Add in half your cherry tomatoes and 250ml of tomato passata, give it a good stir and let it simmer for a minute or 2.

Whilst it is simmering wash and finely chop up some fresh basil and set aside.

Once your pasta is just a minute away from being cooked add 1 cup of pasta water into your sauce, along with your drained pasta.

Add in your remaining cherry tomatoes, your chopped basil and 1tb of unsalted butter. Give it a good stir around. Season with salt and pepper and let it simmer down till a thick fragrant sauce it achieved.

Plate up with some fresh feta crumblled over and some extra basil.
