What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
SPINACH PASTA
Ever have that one friend or that one kid that just won't eat any vegetables? Ever have just the hardest time getting anything green or leafy down into their bodies? Well I have the solution for you, not only is it super yummy, it is also packed filled with fiber and nutrients and it also looks super cool.
This super green, super healthy, spinach pasta. Bright green and packed with nutrients. It is guaranteed to get any veggie hater to eat it with a great big smile on their face. With a little bit of cherry tomatoes, it is also a completely vegan dish made with only spinach, cashews and some lovely spices.
Is this too Green?

Start by peeling and mincing your garlic.

In a pan with a bit of oil add in your garlic and spinach and cook till the spinach is wilted down.
Ingredients

Pasta of Choice

4 Cloves Garlic

1/4 Cup Cashews
4.
2tb Olive Oil
5.
4 Cups Spinach

Cherry Tomatoes

1/2tb Smoked Paprika

In another dry pan(no oil) add in 1/4 cup of cashews and gently toast it on the pan over medium low heat.

In a blender or food processor add in your garlic, spinach, cashews, 1te of salt, 1/2tb of smoked paprika as well as 2tb of olive oil and 1/4 cup of plan water. Blend till smooth.

In a large pan over medium heat add in your lovely green spinach sauce along with 4 portions of cooked pasta with 1/4 a cup of pasta water.

Mix well and season with salt and pepper to taste.
And there you have it! fresh green spinach pasta within a couple of minutes. Serve up and get your stubborn veggie hating friend their fiber.
