TOMATO EGG NOODLES


Do you need a lightning quick, delicious and super nutritious meal? oh and a vegetarian one as well? Well here is a super quick, vegetarian, nutrient packed meal that is sure to get you going strong for the rest of your day. A rich tomato base, with light fluffy eggs just soaked in rich sweet, savoury tomato sauce all bound together with some bouncy noodles. Makes for the perfect, breakfast, lunch and dinner.

This is a widely popular dish amonst Asians all over the world, it is a lovely comfort dish that is loved by all. It is quick, it is easy and it is something that you can make in 20 minutes or less. Whip it up in the early morning and bring it to work, or a great little midnight snack. Give it a crack and I guarantee you will love it.

Ingredients

  1. 4 Eggs

  2. 6 Tomatoes

  3. Noodles of Choice

  4. 2 Cups of Spinach

  5. 2 Cloves of Garlic

  6. 1/2tb of Light Soy Sauce

  7. 1ts of White Pepper

  8. 1/2tb of Sugar


STEPS

  1. Begin by peeling and mincing 2 cloves of garlic.

  2. Cut your tomatoes into little wedges and set aside.

  3. In a bowl beat up 4 eggs till homogenous.

  4. In a wok or pan heat it up with some oil to HIGH heat and drop your eggs in and let them cook till almost done, then scramble them and set aside.

  5. In the same wok add in a little bit more oil and add in your sliced tomatoes and garlic and give it a good fry.

  6. Add in 500ml of vegetable stock or water and let the mixture simmer for 5 minutes.

  7. Season your tomato mixture with 1/2tb of light soy sauce, 1ts of white pepper, and 1/2tb of sugar and throw in your noodles into the tomato mixture to boil.

  8. Right before your noodles are done add in your eggs and spinach and give a good mix together.

  9. Enjoy your thick yummy tomato and egg noodles.
