TOMATO EGG


A Quick Classic dish paired very well with rice, a sweet, savory with a bit of a zing tomato sauce with soft fluffy eggs. A quick faster version of your beloved sweet and sour chicken.

Filled with protein, fiber and all the good stuff that you need and super inexpensive so it saves you bucks and time to get you going doing stuff that you actually want to do. Strap on your apron and get started now!


Ingredients

  1. 3 Eggs

  2. 2 Tomatoes

  3. 4tb of Tomato Ketchup

  4. 2te of Sugar



STEPS

  1. In a bowl crack and mix 3 eggs with a bit of salt.

  2. On a medium High pan pour in your eggs and let it set, breaking it apart once it has set firmly (DO NOT SCRAMBLE THEM) you want nice big chunks of eggs.

  3. Thinly slice your tomatoes and gently fry them on a medium heat pan with a lid. Leave and allow to steam for 2-3 minutes till they turn soft and mushy.

  4. Attempt to crush the tomatoes with a spatula.

  5. Pour in 4 table spoons of tomato ketchup, 2 tea spoons of sugar and a bit of water to thin the sauce slightly.

  6. Once the sauce starts to bubble add back the eggs and coat evenly on low heat.

  7. Leave covered for 2-3 minutes for the egg to soak up all the sauce.

  8. Plate and serve, enjoyed on a bowl of freshly steamed white rice.
