Ingredients
4 Eggs
150g Firm Tofu
2tb Light Soy Sauce
1 Spring Onion
1 Cup of Water
STEPS
Crack and beat up 4 eggs with 1 tb of light soy sauce and 1 cup of water till smooth and homogenous.
Put your eggs through a strainer as this will help give you the smoothest end result for that perfect jiggle.
Gently slice your tofu into 1/4 inch pieces and gracefully layer it into a heat proof bowl.
Gently pour your strained egg mixture over and cover the bowl with some aluminium foil. This will help prevent water droplets on the egg, giving a smoother finish.
Prepare your steaming set up and set your egg & tofu mixture to steam for 10-15 minutes.
Top off with some light soy sauce and some chopped spring onions for the finishing touches.
