SOBA SALAD


It has been a long hard week and you have been going for a bunch of take outs non stop. You have been enjoying the lovely fried chicken, burgers, sandwiches, pastas and god knows what else. After a long week of lovely tasty food you will need some good old healthy food to bring your belly back to health and to energise you ready for the next week.

A good old simple soba salad, featuring fresh and bold flavours. A simple tossed salad of cucumbers, sweet cherry tomatoes, sweet crunchy carrots and some springy umami seaweed, all held together with some good old sesame seed soba noodles. The best part is that this dish is eaten cold, making it perfect for take out lunches or the perfect side to a BBQ party.


Ingredients

  1. Soba Noodles

  2. Dried Seaweed

  3. 1 Carrot

  4. 1/2 Cucumber

  5. Cherry Tomatoes

  6. Fried Shallots

  7. 1/8 Cup Mayonnaise

  8. 1tb Sesame Seed Oil

  9. 1tb Light Soy Sauce

  10. 1tb Honey


STEPS

  1. Set your soba to a boil, once boiled strain and run under some cold water to wash off the excess starch and set aside.

  2. Set your dried seaweed to boil for a minute or 2 till it softens. Drain and run under some cold water, then chop it up to little bite size pieces.

  3. Peel and thinly slice your carrot and give it a quick fry over medium heat till it just softens, should take no more than 3-5 min.

  4. Cut your cucumber into little triangular wedges and set aside. Feel free to cut it was thick or as thin as you like.

  5. Slice your cherry tomatoes in half.

  6. In a bowl add in 1/8 cup of mayonnaise, with 1tb of sesame seed oil, 1tb of light soy sauce and 1tb of honey and give it a good mix together.

  7. In a large mixing bowl add in all your vegetables, your cold soba noodles, your sesame seed sauce and some fried shallots. Give it a good mix and enjoy.
