Ingredients
150g Minced Pork
1 Thumb Sized Piece of Ginger
2 Cloves of Garlic
2 Eggs
150g Firm Tofu
1 Cup Dried Seaweed
White Pepper
1tb Corn Flour
STEPS
Start by peeling your ginger and garlic.
Thinly slice your ginger and finely mince your garlic.
Heat up a pot over high heat and add in some vegetable oil.
Once hot add in your ginger and garlic along with 1 cup of dried seaweed and give it a quick fry till the aromas of the ginger and garlic fills your kitchen.
Add in 500ml of water and bring it up to a boil.
While your soup is boiling gently cube up your firm tofu and set it aside.
After 10 minutes of the soup boiling away add in your minced pork and let it boil for another 5 minutes just to cook the pork.
Add in your tofu and let it boil for another 2-3 minutes.
In a bowl add in 1tb of corn flour and about 1/4 cup of water to make a corn starch slurry. Add it into your soup, this will help thicken and give it more body.
In a bowl crack and very minimally mix your eggs, and gently pour it into your soup. Season with salt and white pepper to taste and enjoy!
