PORK & SPINACH CURRY


Lovely tender, flavourful and exciting pork belly. Paired together with the spices and heat of India, with deep bold flavours and spices that is sure to get your taste buds jumping with joy. With some spinach it just makes a complete meal espacially paired with some rice or some lovely naan.

There is just something special about lovely pork belly melting all its fat away into the curry, it just makes the curry so much more flavourful, so much bolder and just a ton tastier. You have got to try this quick and simple, fuss free curry as it is sure to blow your socks off.


Ingredients

  1. 500g of Pork Belly

  2. 4 Cups of Spinach

  3. 1 White Onion

  4. 2 Tomatoes

  5. 2tb of Curry Powder

  6. 2 Pods of Cardamom

  7. 3-4 Cloves

  8. 1 Star Anise


STEPS

  1. Start by peeling and slicing your onions into thin slices.

  2. Chunk up your tomatoes into wedges.

  3. Thinly slice your pork belly, the thinner the pork belly the more flavour it can release.

  4. In a wok add in some oil over high heat, once hot add in your onions, cardamom, cloves and star anise and fry till fragrant.

  5. In a bowl add in 2tb of curry powder, along with a little bit of water to make a curry paste.

  6. Add your curry paste into your wok and fry it till fragrant.

  7. Add in your pork belly and let it fry up, mixing well so everything gets to know each other.

  8. Once your pork belly is a little more cooked, add in your tomatoes and along with 2-3 cups of water or just enough to cover your pork.

  9. Let the whole mixture simmer for 30-45 minutes over medium heat stirring occasionally till a lovely thick rich curry forms.

  10. Add in your spinach, season to taste with some salt and let it cook for another minute till your spinach has wilted.


As you enjoy this dish try not to think about the amount of butter you have added to this. Enjoyed well with some naan or some plain white rice. Happy Cooking,
