MUSHROOM ALFREDO

Ingredients

  1. Pasta of Choice

  2. 500g of Mushrooms (I went with shiitake and closed cup)

  3. 4 Cloves of Garlic

  4. 1/2 a White Onion

  5. 1/2 Cup of Double Cream

  6. 1ts of Nutmeg

  7. 1tb Balsamic Vinegar

  8. Parmesan Cheese

STEPS

  1. Set your pasta to boil

  2. Slice up your mushrooms into bite sized chunks

  3. Peel and mince your garlic and onion

  4. In a pan of high heat WITHOUT OIL, fry your mushrooms in batches till they are cooked and if you can get a nice char on them as well. More char= More flavour.

  5. Lower the heat down to a medium low add in a little bit of oil and give your onions a quick fry. till fragrant then add in your garlic.

  6. Once the garlic is fragrant add back in your mushrooms and 1/2 a cup of double cream.

  7. Add in 1tb of balsamic vinegar, 1ts of ground nutmeg, a good grating of parmesan cheese and season with salt and pepper to taste.

  8. Add in your pasta along with some pasta water and coat well, if it is too dry add in some more pasta water. Season with salt and pepper and you got yourself a quick and easy pasta dish.
