Ingredients

  1. 4 Chicken Thighs

  2. 1 thumb sized piece of ginger

  3. 1 clove of garlic

  4. 1tb of Miso

  5. 1tb of Mirin

  6. 1tb of Sake

  7. 1tb of Light Soy Sauce

  8. 1tb of Honey

STEPS

  1. Begin by making your marinade of 1tb of miso, 1tb of mirin, 1tb of sake, 1tb of light soy sauce, 1tb of honey and peeling and grating in 1 thumb sized piece of ginger, followed by 1 clove of garlic.

  2. Gently make some scores on your chicken thighs to the marinade infuses faster.

  3. Coat your chicken with your lovely marinade and let it infuse for a minium of 5 minutes, overnight for best results.

  4. As the chicken is marinating, preheat your oven to 180°C.

  5. Line a deep baking tray with some baking paper or aluminium foil, and carefully arrange your chicken with its skin facing up for the best results.

  6. Let it cook for 30-45 minutes till cooked through.

  7. Carefully remove and serve over some yummy rice, don't forget all the lovely juices and sauce that is left in the tray!
