Warm, tasty, and just all around good for the soul. Just like how the great chicken noodle soup is used to cure the common cold, this little dish is what we use in Asia to cure EVERYTHING. From depression, to the smallest colds, to heart aches, to a broken limb.
This is something light, to fill your little belly before a tough night out. Giving you all the nutrients you need without the hefty bloated belly that comes along with a huge meal.
Perfect under a cold night, and super fast and easy to make. A quick easy meal for students, parents and all that is just looking for a quick HEART WARMING bite.
Ingredients
1 Cup of Rice
6 Cups of Water
350g of Chicken Thighs
10g Raw Peanuts
1tb of Goji Berry
1.5te White Pepper Powder
1 Carrot
1.5tb of Light Soy Sauce
STEPS
In a LARGE pot, dump 1 cup of washed rice along with 6 cups of water and bring to a low boil with the lid half covered.
Peel and chop up a carrot into bite size chunks.
Throw the carrots, chicken, peanuts, and Goji berries into the pot and let it simmer for 20 minutes till the chicken is cooked through.
Remove the chicken and place it into an ice bath till it is cool to the touch.
Using your LOVELY hands or a pair of forks, shred the chicken into strips.
Season the porridge with 1.5 tablespoon of light soy sauce, 1.5 teaspoon of white pepper powder and salt to taste. Let it simmer for an additional 5-10 minutes till the mixture thickens.
Serve in your favorite bowl and garnish with the shredded chicken.
Extra:
