BUTTER CHICKEN

Do you like BUTTER? Do you like CHICKEN? Then you are sure to love this dish, a simple luxurious, rice butter chicken. This is easily one of the most sinful dishes within the Indian cuisine, filled with layers of buttery goodness all bound together with a thick tomato cream curry. No only is it buttery, creamy and all around yummy but the strong hits of spice, flavours, aroma and the refreshing tomato base just makes this dish all that much more addictive. It goes perfectly with some garlic butter naan bread or just over a bed of white fluffy rice. I swear if you have not tried this before, you are truly missing something amazing in your life. You will be instantly transported to heaven and the Angel Butter will hold you closely keeping you warm and safe.

Ingredients

  1. 400g Chicken Thighs/Breast

  2. 2tb Butter (or More)

  3. 1 Cup Double Cream

  4. 1 Tin Pealed Plum Tomatoes

  5. 3 Cloves Garlic

  6. 1ts Grated Ginger

  7. 1tb Garam Masala

  8. 1/2 Cup Yogurt

  9. 1tb Ground Cumin

  10. 1ts Tumeric Powder

STEPS

  1. Start by peeling and grating 3 cloves of garlic.

  2. Chop up your chicken into small little bite size pieces and place them into a mixing bowl.

  3. Within that bowl add in 1/2 a cup of plain yogurt, 1ts of turmeric powder, 1/2tb of garam masala, 1/2tb of cumin powder, your grated garlic, 1ts of salt and 1ts of grated ginger. Mix well and let it marinade for at least 10 minutes or up to over night.

  4. In a wok or large pot add in some oil and heat it up to HIGH HEAT. Once hot fry off your chicken till cooked through. Set aside.

  5. To that pot add in 2tb of butter till melteded then add in your can of peeled plum tomatoes and scrap up all them good burnt bits at the bottom (yummy).

  6. To your bubbling tomatoes add in 1/2 a cup of water along with 1/2tb of cumin powder, 1/2tb of garam masala and more butter if you want :)

  7. Let your buttery tomato sauce simmer away on low heat for 2-3 minutes till the tomatoes are soft. Transfer the sauce into a blender and blend till smooth, then transfer back into the pot.

  8. Add in 1 cup of double cream mix well then drop in your little nuggets of chicken and mix well making sure it is well coated.

  9. Let the whole mixture simmer for an additional 5-10 minutes.

  10. Season to taste with some salt or some more butter, you can never add too much butter to this dish. YAY BUTTER!

As you enjoy this dish try not to think about the amount of butter you have added to this. Enjoyed well with some naan or some plain white rice.

Happy Cooking,
