Miso, the humble fermented soy bean paste that is just packed with wonderful aromas, umami flavours and everything in between. It is the perfect sauce to pair with your humble creamy chicken stir fry and better yet throw on a layer of cheese and gratinate the whole thing. A quick and simple, but soul cleansing and healing dish that will bring nothing but joy to your meal.
This pairs perfectly with a nice bowl of freshly steamed rice or even just with some good crusty bread, you could even boil some pasta and throw it inside and make one hell of an amazing creamy cheese pasta. A quick and versatile dish that can be amended to fit your every craving.
Ingredients
500g Boneless Chicken
2 Cups Milk
2tb Flour (All Purpose)
2tb Butter
1tb Miso Paste
1 Medium Onion
3 Cloves Garlic
1tb Light Soy Sauce
Cheese of Choice
STEPS
First things first, time to chop chop your boneless chicken into bite size pieces of your choice.
Peel and quarter your onion and mince your garlic.
In a wok add in a little bit of oil over high heat. Once hot add in your onion and garlic to fry till fragrant. Then add in your chicken and give it a good fry up till it is almost cooked through.
Lower the heat to a medium and plop in 2tb of butter along with 2tb of all purpose flour, give it a good mix and slowly drizzle in 2 cups of milk.
Stir well till well combined, add in 1tb of miso paste, 1tb of light soy sauce and salt and pepper to taste. Let it slowly bubble away till the mixture thickens.
Generously sprinkle your favourite cheese be it American, Cheddar or Mozzarella. I went with a mixture of Cheddar and Mozzarella for the perfect cheese crust.
Gently place your wok under the broiler or your oven on max settings to melt and char the cheese till you get the most amazing cheese crust.
