What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.

PEA & MINT PASTA

PEAS & MINTS

Peel and roughly mince 1 onion and 4 cloves of garlic or more if you love garlic.
Ingredients

Pasta

2 Cups of Peas

2tb of Olive Oil
4.
1 White Onion

1/2 Cup Feta Cheese

Fresh Mint

In a pan heat up some olive oil over medium heat and gently fry your onions and garlic till fragrant.

While waiting for your onions & garlic set your pasta to boil according to package instructions, but undercook it by 1 minute and save some pasta water.

Add 2 cups of peas to your garlic & onions and give it a quick fry till the peas have softened.
5.
Throw your pea mixture into a blender along with 1/8 cup of pasta water and some fresh mint leaves. Blend till smooth.
6.
Once smooth add it back into the pan along with your pasta and some feta cheese, give it a good toss together and season with salt and pepper to taste.
