With the upcoming summer, heat waves and the general melt down we need something cool to keep us energised and refressed. People often opt for ice cream, smoothies, iced coffees or just plain ice. But often these yummy treats are great for temporarily cooling you down and never actually keeps you full. 

​

Why not have a tasty pasta salad? This light and refreshing dish is sure to keep you cool, energised and ready to handle the heat. The perfect concuction of cooling cucumbers, refreshing cherry tomatoes, rich feta cheese, flavourful olives, sweet and crunchy carrots and bell peppers and lovely fusilli to trap the lovely olive oil balsamic dressing.

The best part is, you can make this the day before and enjoy it whenever you want with always crunchy and fresh vegetables. Perfect for take out lunch or side dishes for picnics and bbqs.

How to beat da heat?

1.

Set your pasta to boil in some boiling salted water according to package instructions.

2.

Peel and finely slice your carrots into litlte match sticks and set aside.

3.

Thinly slice your red bell peppers and set aside.

Ingredients 

1.

1 Cup Fusilli

2.

1 Carrot

3.

1 Red Pepper

4.

1 Cucumber

5.

Cherry Tomatoes

6.

Pitted Green Olives

7.

2tb Olive Oil

8.

2tb Balsamic Vinegar

9.

Feta Cheese

In a pan over medium heat give your carrots and bell peppers a quick fry till then have softened.

Thinly or thickly chop up your cucumber and add it into a large mixing bowl. Slice up your olives and half your cherry tomatoes and add it into your mixing bowl.

6.

Drain your pasta and run it over some cold water to rinse off the excess starch and to cool it down. Gently seaon with some salt to taste.

7.

To your missing bowl add in your pasta, carrots and bell peppers and give it a good toss together.

Gently pour in about 2tb of olive oil and 2tb of balsamic vinegar, season to taste with salt and pepper and give it a good mix together.

9.

Plate up with some fresh feta crumblled over.
