Curry Puff

A delicious little parcel of spiced chicken and potato and some times even an egg. Encapsulated by A light crispy shell holding all the delicious. This is a great snack to be eaten for breakfast or tea time.

A super easy recipe and great fun in the kitchen for family or friends, a great way to spend the afternoon just making and rolling the dough and building flavour with spices. Not to mention it is a great snack to bond over and have a little catch up session.

How to Spice up your Life?

Ingredients 

Puffy-Puff-Puff

1.

2 Onions Minced

2.

2 Medium Potatoes Minced

3.

300g Chicken Diced

4.

2tb Garam Masala

5.

1 Cinnamon Stick

6.

1 Star Anise

7.

4 Cardamoms

8.

2.5 Cups Flour (All Purpose)

9.

1/2 Cup Butter

2tb Curry Powder

1.

In 1 bowl Mix 1 and 1/4 cups of flour with 1 teaspoon of salt and slowly drizzle in 1/2 a cup of water till a rough shaggy dough forms.

Stretch out your muscles and begin to knead for 5-10 minutes till a smooth dough forms and comes cleanly off the bowl.

3.

Cover with a damp cloth or cling wrap and let it rest for 30 minutes.

4.

In another bowl mix 1 and 1/4 cups of flour with 1/2 a cup of melted butter till just combined.

5.

Give it a good knead for 3-5 minutes. It should not be as well formed as the dough ball and it should crumble once in a while. Cover and let it rest for 30 minutes just like the plain flour dough ball.

In a pan or wok on medium heat add in some oil and fry your lovely onions till translucent and fragrant.

Add in 1 stick of cinnamon, 1 star anise and 4 pods of cardamom and fry till fragrant. 

3.

Add in 1tb of curry powder and 1tb of garam masala and mix till well combined.

4.

Add in your chicken and minced potato and give it a good mix.

5.

Cover with a lid and lower the heat to medium low and let it cook for 20-30 minutes or till the potatoes are soft.

Add salt to taste and remove from the heat and allow to cool.

Assembly-Refer to the diagram if lost

1.

You should have a plain dough ball and a butter ball. The dough ball should be smooth, soft and bounce back if you poke it.

Puffy-Puff-Puff

2.

Divide each ball into 2 even smaller balls. You should now have 2 dough balls and 2 butter balls.

3.

With a rolling pin or your hands flatten 1 dough ball to about 12-13cm diameter and place 1 BUTTER ball in the center.

4.

Wrap up the butter ball with the dough ball and gently form it back into a ball. Repeat with the remaining dough and butter ball.

5.

Generously flour your work surface and with a rolling pin start to roll our your dough butter ball till about 0.2-0.3cm thick. 

6.

Trim the edges to form a rectangle.

7.

Roll up the dough from the shorter length into a little log.

8.

Slice the log into 8 even pieces. You should now have cute little spiral dough logs with butter layered within.

9.

Using a rolling pin or just your hands start to roll out each piece into a circular piece of dough roughly 5 inches in diameter.

Scoop in your filling about 1tb and seal it up and crimp the edges in whatever style you wish. 

11.

Heat up some oil in a pot enough to cover the little puff parcel. 

12.

Gently lower your puff parcel into the oil and fry till golden brown shouldn't take more than 1 minute on each side. 

Extra:

Feel free to add whatever filling you want into the puff, for that extra fill add in a 1/8 of a boiled egg.
