What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.

Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
CHERRY TOMATO &
PINE NUT SPAGHETTI
Plum red juicy CHERRY tomatoes, these little sweet sour plumps of joy brings flavour to anything it touches. Paired with some freshly roasted sweet and delicate pine nuts all bound together with the best of OLIVE OILS you got yourself a quick and easy spaghetti lunch right there waiting for you.

If you are speedy with a knife this simple dish can be made within 10 minutes or less. The perfect meal for a quick and fresh lunch, paired with some ham or roasted meat it also makes for the perfect side dish for a simple yet romantic dinner date.
What on earth is a Pine Nut?
1.
Start by peeling and mincing 1 medium white onion.
2.
Peel and mince 4 cloves of garlic.
3.
Wash and slice 100g or more of closed cup mushrooms. (if you love mushrooms add more)
Ingredients

Spaghetti
2.
3tb Olive Oil
3.
1 Medium White Onion
4.
4 Cloves Garlic
5.
25g Pine Nuts
6.
Cherry Tomatoes
7.
100g Closed Cup Mushrooms
8.
2tb Balsamic Vinegar
9.
Fresh Parsley

Halve as much cherry tomatoes as you want, I used about 10 for 2 portions.

Set your pasta to boil in some salted water according to package instructions.

Put on a pan on medium heat with NO oil and add in about a hand full of pine nuts. Gently move them around and get them lightly toasted. Once toasted set aside.

In a large pan or wok add in about 3-4 tb of olive oil on medium high heat and fry off your onions and garlic till fragrant.
8.
Add in your mushrooms and continue to fry till it is cooked through. Lastly add in your tomatoes and give it a quick fry.
9.
Once your spaghetti is perfectly cooked add your pasta into the pan with a bit of pasta water (about 4-5tb). This will help emulsify the sauce, making for a tastier dish
10.
Season with 2tb of balsamic vinegar and salt and pepper to taste and serve up with some freshly chopped parsley and your pine nuts on top.
