What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
CHAR KUEY TEOW
The famous Char Kuey Teow, popular all over the streets of Malaysia and even making its way around the world, with its literal translation to fried kuey teow noodles, it is definitely a dish you do not want to miss out on. Big flavours, big aromas, and it will for sure get you coming back for more.
This simple humble dish combines soft bouncy kuey teow rice noodles with a dark, sweet and savoury soy sauce paired with Chinese sausage, prawns, fish cake, fish balls and everything in between. A quick simple meal often eaten for breakfast, lunch and dinner and even late at night.
Back in Malaysia you can see people frying up woks of these simple stir fried noodles, you can see the roaring flame just blasting its heart out into the wok, giving you the signature wok hay. A prized dish to be eaten all around malaysia, not only is it readily affordable but it is also sooo soo yummy.

Ingredients

Kuey Teow Noodles

2 Links Chinese Sausage

Bean Sprouts
4.
Prawns
5.
4 Eggs

1tb Light Soy Sauce
7.
1tb Dark Soy Sauce
8.
1tb Fish Sauce
9.
1tb Oyster Sauce
10.
2ts White Pepper
1.
Begin by placing your Kuey Teow noodles into a huge bowl and soaking with water according to package instructions.

Peel and devein your prawns if they are not cleaned yet.
3.
Optionally slice your fish cake into strips, halve your fish balls and slice your spring onions into long strips and set aside.
4.
Slice your Chinese sausage into thin slices and set aside.
5.
Give your bean sprouts a good wash.
6.
In a wok or pan set to high heat, add in about 2-3 table spoons worth of oil and let it heat up till extremely hot.
Optional:
Fish ball, Fish Cake, Spring Onion

Once hot add in your fish cakes, fish ball and Chinese Sausage, give it a good fry till they are almost cooked through.

Push your ingredients to the side and crack in 4 eggs and give it a quick scramble and fry.

Add in noodles, spring onion, bean sprouts and prawns and give it a fry up for 1-2 minutes.
10.
Add in 1tb of light soy sauce, 1tb of dark soy sauce, 1tb of oyster sauce, 1tb of fish sauce and 2ts of white pepper. Give the whole thing a good toss together and fry for an additional 3-5 minutes till the prawns are cooked through and the noodles are soft.

Serve up and let your soul be blessed.

You could also add in anything you like into your noodles from seafood, to meats like chicken or pork to any thing you could ever imagine.
