CARAMELISED GOODNESS

Ingredients

Pasta of Choice

1 Large Onion

Sun Dried Tomatoes

4.

Cherry Tomatoes

1/8 Cup Double Cream

6.

1tb Balsamic Vinegar

7.

1tb Olive Oil

8.

Fresh Parsley

1.

Peel & finely slice 1 large onion

In a pan on medium low heat, add in your onions and a little bit of water and cover with a lid. Let it caramelise, till dark brown and jamy. Make sure to give it a stir once awhile and add a little bit more water if it looks too dry.

While the onions are caramelising halve your cherry tomatoes and chop up your sun dried tomatoes into bite size pieces.

Remove your jamy caramelised onions and set it aside.

Set your pasta of choice to boil.

In the same pan add in 1tb of olive oil over medium high heat, add in your sundried tomatoes and cherry tomatoes to fry up for 1-2 minutes, till fragrant.

Add back in your caramelised onions, followed by 1/8 cup of double cream, 1tb of balsamic vinegar and your boiled pasta. 

7.

Mix well and season to taste with salt and pepper.

Serve up with some freshly chopped parsely.
