What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
LEMON BUTTER HERB SHELLS
This is probably the easiest recipe on here for any pasta dish. You can cook this dish in the time it takes for your pasta to boil.
It is a very simple dish, packed with Italian flavours, freshened up with a pinch of lemon to cut through some of the buttery richness. It is a dish that can be whipped up in a flash and it is the perfect side dish to any out door BBQ.

Ingredients

Pasta Shells

Mushrooms
3.
4tb Butter

4 Cloves Garlic

Italian Herbs

1 Lemon

1 Stock Cube

Slice up your mushrooms and mince your garlic.

Set your pasta to boil.

In a pan on medium heat add in 1tb of butter and fry your mushrooms till cooked. Set a side.

In the same pan add in 3tb of butter and let it melt and heat up till it turns a light brown.

Lower down the heat to low and add in your garlic and your herbs giving them a gentle fry till fragrant. "I used the basic mixed Italian herbs I found in Tesco, but you can add in whatever herbs you wish. Make it your own"

Grate in 1 lemon's worth of lemon zest and the juice of 1/2 a lemon.

Mix together 1 stock cube with 1/2 a cup of water and add it into the buttery herb mixture.

Let the mixture simmer on medium heat for 3-5 minutes till the mixture has reduced slightly.

Add in your pasta and coat well, if it is too dry add in some pasta water. Season with salt and pepper and you got yourself a quick and easy pasta dish.
Serve up with your mushrooms and a wedge of lemon for an extra zing!
