What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
BROWN BUTTER & SAGE GNOCCHI
Good old butter, what can butter not do for us. It is rich, savoury, tasty and come on its just butter. But do you know what is better than butter? Brown butter, the lovely dark rich caramelised version of the humble butter. Lets use simple butter to create one of the most popular and tastiest gnocchi recipes out there.
Sage & brown butter is sure to be a home family favourite, mainly because of how tasty it is and how easy it is to make it. It is so easy that it can be done in a snap and you will be greated with a savoury, rich, subtly sweet and fragrant gnocchi dish. It is quite an easy dish, but to get it perfect takes a lot of skill and time. Here I share with you the easiest way to make this fragrant, rich and tasty gnocchi dish that will sure to make the perfect quick lunch or dinner.
Buttery Goodness
Ingredients

Gnocchi

1tb Unsalted Butter
3.
1tb Parmesan Cheese
4.
Fresh or dried sage
5.
1 Shallot
1.
Bring a pot of water to a boil

Peel and finely slice 1 shallot and set aside.

In a pan over medium heat add in 1tb of unsalted butter and gently swirl it around till it picks up a toasty golden colour.

Add in your shallots into your butter and give it a little fry up.

Put your gnocchi to boil

Once they are floating they are good to be fished out and into your pan with the butter and shallots, along with 1/8 cup of the gnocchi water.

Add in 1/2ts of dried sage or some fresh sage leaves along wiht some parmesan cheese and give it a good toss together.
Your goal is to emulsify the sauce by tossing the gnocchi and the sauce together, to give you a rich and creamy sauce.

Season well with salt and pepper to taste and some additional parmesan cheese.

Plate up with some fresh basil and some extra cheese!!!!!!!!!!!!!!
