What is Korea without Kimchi? It is a staple in many of their traditional dishes, it is so common to find it in all their meals as a side dish. It is usually made out of Napa cabbage, radish, some carrots and fused together with the red hot chili flake known as Gochugaru.
Here we learn the most basic kimchi, it is a great introduction to fermentation and a great dish to make for any meal. So get your jars out and clear out a shelf because your whole kitchen is going to smell like kimchi soon.
BLACK PEPPER PASTA &
CHICKEN CHOP
If you are from Malaysia or have ever been to Malaysia you would be very familliar with this dish. It is not per say a traditional dish you would find in Malaysia but it is a very popular item found in many hawker stalls all over Malaysia.
In numerous food halls known as Hawker stalls all over Malaysia you would find numerous stalls selling a wide variety of food and there will always be one western food stall. This is usually very popular among the young as it feaetures fried meats, chips, pasta and a range of other western dishes. The most popular of those include pasta with a choice of marinara or black pepper and a griled chicken chop usually served with a side salad of cucumber, lettuce and tomatoes.
This easy quick meal really brings out the large variety of food options in Malaysia, giving an Asian twist on a western classic. This sweet, savoury and slightly spicy pasta dish will sure get your taste buds thingly with joy. Paired with some tender, juicy grilled chicken thighs you are sure to be a very happy person after eating this.

Ingredients

4 Chicken Thighs

Spaghetti

4 Cloves Garlic

1 White Onion

Birds Eye Chili

1tb Black Pepper

3tb Oyster Sauce
8.
3tb Light Soy Sauce
1.
Begin by breaking down your chicken thighs leaving the skin on, assuming they have not been deboned. Season them with salt and pepper.

In a ripping hot pan on high heat add in a bit of oil and set your chicken chops skin side down and let that skin get crispy and brown. After 3-4 minutes flip and lower the heat down to medium and let the chicken cook for another 7-8 minutes till cooked through.

As the chicken is cooking set your pasta up to boil.

As the pasta is boiling, peel and mince 1 white onion and 4 cloves of garlic.

If you like your dishes a little more spicy, chop up a few birds eye chilis as well.

Once your chicken is done cooking, set them aside. In the same pan or wok add in your onions and let them fry till fragrant and translucent.

Add in your garlic, chili and 2tb of black pepper continue to fry over medium high heat till fragrant. Make sure to constantly stir to prevent burning.

Once your pasta is done add it into the wok with your onions, garlic, chili and black pepper and give it a good toss together.
9.
Season your pasta with 3tb of oyster sauce, 3tb of light soy sauce and season to taste with salt and additional black pepper.

Plate up your lovely pasta and your perfectly cooked and crispy chicken chop, oh and a side of salad.
